And all those processing facilities are staffed with strangers of dubious hygiene and cleanliness standards. I imagine even the machinery is not cleaned as needed.
There is a reason the introduction of indoor plumbing and municipal sewer systems made a difference in health outcomes. And if you kill the rats there is no plague.
